On today’s episode, I welcome Jess Morton. She’s the General Manager of the Toronto Institute of Bartending. She runs the school full-time, assisting with SpiritHouse operations (the school’s training bar), as well as an instructor, bartender, and freelance mixologist.

Today we chat about her ginspired journey, what it's like to work at a bartending school, the different styles of gin, the craft gin industry, her favourite gin picks, and of course, we share cocktails, and there’s a gincident story or two! 


About Jess Morton
Jess Morton is the General Manager of the Toronto Institute of Bartending (TIB). TIB is the leading bar school in Ontario and has trained over 65,000 students since 2002. They are recommended by several employers in Toronto, including Maple Leaf Sports and Entertainment (MLSE). Jess is also an Assistant Manager at SpiritHouse Toronto, the upscale cocktail bar where the bartending school is run out of.


Jess runs the school full-time, assisting with SpiritHouse operations, and being an instructor, bartender, and freelance mixologist. She has worked in the Toronto bar scene since 2016 in various bars and restaurants. Jess has a passion for spirits education, learning and all things botanical - especially gin.
